Spice Up Your Breakfast The Mexican Way

Everybody says that breakfast is the most important meal of the day, and yet we don’t treat it with enough respect. An important meal should be flavorsome and memorable; something we look forward to. Instead, we all too often just grab the same old thing and force it down our throats before we set off to work. That’s only if we actually eat anything; there are 31 million Americans who skip breakfast altogether. How do they manage to make it through their days when they start out with nothing in their stomachs?

Even if you’re someone who swears by making sure you get breakfast every morning, chances are you’re not putting much imagination into the process. A recent poll revealed that breakfast options in the United States mainly consist of cold cereal or bacon and eggs. There are so many other delicious options out there in the world that we don’t feel we’re doing ourselves justice, so today we’re going to present you with a spicy treat that comes from Mexico that will set you up for the day, and will take less than thirty minutes to prepare. It’s a dish called huevos con chorizo, and it will change the way you think about your first meal of the day.

As a word of caution, this meal contains meat, so we’re afraid that if you’re a vegetarian, this isn’t an option for you. You could always substitute the meat for a vegetarian alternative though. This meal is really all about the spices, which are a staple of Mexican food. What you’ll need

You don’t need a huge list of ingredients to make this meal; you’ll have most (if not all) of the ingredients in your kitchen already. Part of the joy of this breakfast option is its simplicity. Most people only wake up one to two hours before they need to head out of home to go to work (although there are many great reasons you should try waking up earlier). Part of that time will be spent showering, dressing, getting children ready for school if you’re a parent, and maybe a few minutes checking out the news. We don’t leave ourselves with a lot of time for breakfast, so being able to prepare something quickly and easily is important. This recipe fits that description.

To make huevos con chorizo, you’ll need:

Six ounces of chorizo;

Four beaten eggs;

Six tortillas (corn);

One diced avocado;

One quarter cup of shredded cheese (preferably cheddar, but feel free to substitute your own preference;

Fresh, chopped cilantro;

Sour cream;

Roasted jalapeno peppers (we warned you it would be spicy!); and

Your favorite hot sauce (any will do).

How to make huevos con chorizo

So here’s a step by step guide to taking your ingredients and making them into something fabulous. It’s possible to get all of this done inside twenty minutes; barely any longer than it would take you to prepare a bacon and egg-based dish.

Start off by finding a large pan, heating it up to a medium temperature and throwing in your chorizo. Cook it thoroughly. That should take around five minutes, although give it an extra minute if you’re not convinced they’re completely cooked.

The next step is to introduce the eggs. Stir and scramble them until they’re fully mixed in with the chorizo. In terms of texture, the eggs should be set, but still a little moist. It won’t take long for the eggs to cook, so pay close attention to them. If they dry out, it will ruin the taste! When you’re happy that they’re at the perfect level, set the pan aside.

The tortillas come next. Warm them up to taste, and then simply pour in your chorizo and egg. You might need to use a ladle or a spoon to get this step right!

Now all you need to do is top it off. Add your jalapenos, avocado, cilantro, and cheese on top, and then top that with your hot sauce and sour cream. There’s no ‘correct’ ratio for toppings, so just do what feels right. If you struggle with too much heat, feel free to leave off the jalapenos. We promise we won’t tell anybody.

That’s it! Your huevos con chorizo is now ready for you to enjoy! How easy was that?

Although we list the meal here as a breakfast option, huevos con chorizo can be enjoyed at any time of the day. It’s as much fun as a late-night snack as an early-morning meal, and given the speed at which it can be made, it doesn’t take too long out of your day to prepare it. You’ll probably spend more time dicing the avocado than you will cooking the meal.

Breakfast should be fast, filling and tasty. Get it right, and it lifts your mood in the morning and gives you a spring in your step to start the day. There will always be a place for the traditional cereals, bacon and eggs, but not every day. Introduce some variety to your morning palette, and give yourself something new to look forward to when you wake up!
