4 Must-Try Vegetarian Dishes

One of the most difficult things about being vegetarian is coming up with healthy, full meals. It’s very time-consuming and there are so many options, it’s hard to know where to start. That’s why we’ve gathered 4 simple yet mouthwatering vegetarian dishes that you can prepare at any time.

These dishes require inexpensive ingredients. If you’re always on a tight schedule and you need a quick fix, try these 4 must-try recipes.

1. Vegetarian Burrito Bowl

Vegetarian burrito bowls are a staple in pretty much any vegetarian menu. There are different ways of making it and it’s extremely healthy. The ingredients included in the bowl provide everything you could need to stay energized. Iron, protein, vitamins, and essential amino acids can all be found in a vegetarian burrito bowl.

Typically, vegetarian burrito bowls contain:

  • Sliced avocado
  • Quinoa
  • Corn
  • Rice
  • Sliced bell peppers
  • Black beans
  • Tomatoes
  • Lettuce

You can also add tofu and onions if you want. It’s completely up to you how many elements you want in your bowl. Top it off with some olive oil, taco sauce, or siracha and you’ve got yourself one mean burrito bowl.

2. Vegetarian Fajitas

Vegetarian fajitas are made with sliced bell peppers. To make it, stir fry the bell peppers in a pan with the oil of your choice. Fajita mixes typically contain:

  • Chili powder
  • Garlic
  • Lime
  • Paprika

Once the bell peppers are fried and the ingredients are well mixed in the pan, you can put it all in a tortilla along with some black beans, onions, and avocado.

3. Cream of Mushroom Soup

Cream of mushroom soup is the easiest dish to make on this list. It involves mixing roux with either milk or cream and then adding mushrooms to the broth.

Of course, you can always add your own spin to it and make it more elaborate. You can add herbs to the broth or garlic to give it a special flavor profile. If you have a store-bought roux, the entire thing takes no more than 10 minutes to prepare.

4. Stuffed Bell Peppers

In stuffed bell pepper recipes, cheese is usually the star of the show! Typical recipes involve preparing a mix that includes:

  • Cooked rice
  • Cheese
  • Beans
  • Herbs
  • Vegetables

Cut a hole in the bell pepper and hollow it out. Either that, or cut them in half and remove the bitter, white parts. Stuff the peppers with the mix and them roast them in the oven for about 10 to 15 minutes or until the peppers look soft and the cheese is melting.
