Allen's Beer-Butt Chargrilled Chicken
Ingredients:
4-5 lb. whole chicken
1 tsp dry mustard
1 tsp black pepper
1 tbsp garlic powder
1 tbsp paprika
1 tbsp sea salt
1 tbsp brown sugar
Basting Spray:
1 can of beer
2 tbsp lemon juice
1 c. apple cider
2 tbsp balsamic vinegar
2 tbsp olive oil
Directions:
Rinse and pat dry chicken. Mix dry ingredients and rub on chicken both inside and outside. Open the beer, pouring one-half into a large spray bottle. Add cider, vinegar, and olive oil. Shake a bit to mix. Insert chicken upright onto the beer can and cook over a medium-hot covered grill until done (roughly two hours), spray-basting from time to time. When done, carefully remove the beer can and discard.
