
14 ounces flaked salmon (canned is fine)
˝ cup plain dry breadcrumbs
2 teaspoons Old Bay seasoning
1 tablespoon minced onion (optional)
1 tablespoon Dijon mustard
1 egg, beaten
2 tablespoons finely chopped cilantro
2 tablespoons mayonnaise
1 tablespoon olive oil
1 tablespoon butter
2 lemons
fresh parsley
Combine the salmon, breadcrumbs, Dijon, Old Bay, onion, egg, cilantro, and mayonnaise. Mix well. Shape the mixture into cakes. Heat the olive oil and butter in a large sauté pan over medium heat. Add the salmon patties and cook each side until lightly browned - about 5 minutes. Drizzle with juice of one lemon (or perhaps a bit of your favorite white sauce, or both). Garnish with fresh lemon slices and a sprig of parsley.
Serve with fresh homemade coleslaw and a side of applesauce for a great light meal.
