
3 pounds boneless
skinless chicken breasts
cut into bite-size pieces
1 and 1/2 cups flour
3 eggs
3/4 cup milk
1 and 1/2 cups breadcrumbs
Oil for frying
1 sliced lemon
fresh parsley
Mix the eggs and milk. Dredge the chicken first in the
flour, then in the egg mixture, and finally in the breadcrumbs.
Place in pre-heated oil (approx. 375) and fry on both sides
until golden brown. Garnish with lemon slices and fresh parsley.
