
This recipe is from a co-worker of mine, and it immediately made me think of a perfect appetizer (or snack if done on a smaller scale) for a Super Bowl party. I haven't tried it yet, but wanted to share.
Ingredients:
1 lb. boneless, skinless chicken breasts
1 cup prepared, bottled wing sauce
1/2 thinly sliced red onion
4 tbsp chunky blue cheese salad dressing
4 stalks celery hearts, sliced into thin strips
4 leaves of Romaine or Bibb lettuce
4 small flour tortillas
Directions:
1. Rinse chicken breasts and marinate them in the wing sauce overnight in a sealed container or Zip Loc bag.
2. Preheat over to 400 degrees.
3. Place chicken in shallow baking pan and bake for about 45 minutes or until meat is cooked through.
4. Shred chicken (or slice into thin strips) and divide among the tortillas.
5. Add the red onion, celery, and lettuce; cover with the blue cheese dressing.
6. Roll up the tortilla like a burrito and serve.
