Mix the following ingredients together:
3 1/2 cups Pumpkin puree (1 large can)
1 1/2 cup Oil
3 1/2 cups Sugar
1 package Coconut Cream Pudding mix (3.5 oz)
In a second bowl, mix the dry ingredients
4 1/2 cups Flour
1 1/2 teaspoon Baking Soda
1 1/2 teaspoon Baking Powder
1 teaspoon Cinnamon
1 teaspoon Nutmeg
1 teaspoon Ground Cloves
1 teaspoon All Spice
Slowly mix the dry ingredients into the wet ingredients until everything is combined. Preheat oven to 325°. Grease and flour 3 bread pans or 2 bread pans and a muffin tin (12). Bake 1 hour or until a toothpick stuck in the middle comes out clean (my oven took 1 hour 20 minutes).
I put french vanilla whipped frosting on the muffins, and since I only had one loaf pan, I did 1 loaf last night, and another loaf this morning - double the wonderful smell time!
