2 pkg (10 oz) chopped broccoli
4 chicken breasts
Grated parmesan cheese
2 cans cream of chicken soup
1 cup mayo
1/2 tsp curry powder
1 tsp lemon juice
2 tbsp cooking sherry
Cook broccoli as directed on package. Cube and then cook the chicken breasts. (I cube mine before cooking because I've found the chicken stays more moist and doesn't dry out as much)
Mix together the cream of chicken soup, mayo, curry powder, lemon juice and cooking sherry to form the sauce.
Place cooked broccoli on bottom of an 8x8 pan. Spread 1/2 of the mixed sauce on top of the broccoli. Place cooked chicken on top of that. Spread the rest of the sauce over chicken and sprinkle with grated parmesan cheese.
Bake at 350 for 20 minutes or until golden brown on top and bubbling.
** Sometimes I sprinkle cornflake crumbs on top of the dish before cooking for a little different taste. =)
