Roasted Peaches with Cinnamon-Mint Glaze

Ingredients:
2 fresh white peaches
2 tsp cinnamon
1/4 cup mint leaves
1/4 cup sugar
1/4 cup water

Preparation - peaches:
Cut peaches into quarters and remove pits. Sprinkle
lightly with cinnamon and place in a microwave-safe bowl, cover with plastic wrap and microwave on high for 2 minutes. Be careful when you remove plastic wrap; the steam will be hot!

Preparation - glaze:
Add sugar and water to a small saucepan and heat on the stovetop over high heat. Stir until sugar is dissolved, then stir at least once every 30 seconds. After a few minutes the mixture will be bubbling furiously and will have reduced in volume. Keep heating and stirring until the mixture gets to the consistency of pancake syrup.

Chop the mint leaves and add to the sugar and water mix and continue heating and stirring for another minute. Turn off the heat and pour the syrup through a strainer.

Pour sauce over peaches; the moisture from them will combine with the syrup to form plenty of wonderfully good, sticky sauce. (If you want to serve over ice cream, you'll probably want to refrigerate the peaches and glaze for 2-3 hours until it cools enough to not immediately melt the ice cream.)
