Pukka Hacker Curry

This is a not so traditional but still tasty westernized curry recipe that is easy to make and dead tasty with a Creamy texture and a hot spicy taste.

About an hour cooking time. Serves 3.

1 pack S and B Gold Med Curry Sauce Mix (You can get it at Safeway)
1 lb (beef, lamb, chicken or fried tofu)
1 to 2 lbs potatoes chopped (I like small red ones)
2 tbsp hot Curry Powder
3 tbsp Olive Oil
2 cups water
1 Carrot chopped
2 tbsp Coriander seeds
1 cup plain or lemon yogurt
1 sweet onion chopped (I suggest Walla Walla)
1 handful chopped Cilantro for a garnish
Half a handful shredded Coconut for a garnish

Chop the veggies to bite size pieces then set aside and cut up the meat/tofu. Boil the potatoes and carrots for about 10 minutes to soften and cook. While the potatoes are boiling in a large wok or metal pan heat up the oil till hot and brown the meat but don't burn it. Then add the onions and cook them til they are soft. Drain the potatoes and carrots and add to the pan and fry for a bit then add 2 cups of water and bring to a low boil and cover for 10 minutes. Smash the Coriander Seeds and ad with the curry powder to the boiling water. Take the cover off and ad the curry sauce mix and stir till dissolved and thickened. Then mix in the yogurt and take it off the heat. Let to breath for 3 minutes of so while you are chopping up some cilantro and coconut for the garnish. Serve over rice, some naan or just eat it straight. Makes some great lunches. Then go play computer games or Nintendo and enjoy. This goes well with a juice or some beer.
