Sloppy Joes For A Crowd

I used a whole *family pack* of ground beef for this recipe. You could easily halve it if you'd like, but I like to have the leftovers!

I adapted this from recipes in *The Joy of Cooking* and *The New Basics Cookbook*

3 tablespoons olive oil
2 medium onions, diced small
2 ribs celery, diced small
2 bell peppers, any color, diced small
6 cloves garlic, peeled and minced
2 tablespoons dried thyme
salt & pepper to taste
3 pounds ground beef
1 (8 oz) can tomato sauce
Around 1 cup ketchup
6 Tablespoons Worcestershire sauce
1 cup beer or water
Tabasco sauce, to taste (optional)
Hamburger or kaiser rolls

Heat the oil on a large skillet, and add the onions, peppers, celery, garlic, thyme, salt & pepper. Saute over medium heat for about 10 minutes, or until vegetables are soft. Remove the veggies from the pan and set aside.

In the same pan, add the ground beef, breaking it apart with a spoon. Brown the meat until it is no longer pink. At this point, you will probably want to drain off any fat that has rendered. Return the meat to the pan, and mix in the vegetable mixture, tomato sauce, ketchup, Worcestershire sauce, beer/water, and Tabasco (if using). If you like it saucier, add more ketchup.

Simmer the mixture for about 30 minutes...sauce should thicken slightly. Split open the rolls, toast if desired, spoon on the meat, and dig in!

This will make enough for 7-8 large sandwiches (on large kaiser rolls), or around a dozen small sandwiches (on hamburger rolls)
