Southwestern Sloppy Joes
the cook:teri about more

I found a recipe similar to this in one of my Weight Watchers cookbooks and modified it to my tastes and likes. It turned out pretty darn good for just throwing it together.

1 lbs ground turkey or beef
2 tsp. chili powder
1 can of diced tomatoes with green chilis
1 - 1½ cups corn
½ - 1 cup salsa
package of rolls (about 4)

Brown ground turkey in saucepan. Drain. Add chili powder and tomatoes. Let cook for about 5 minutes. Then add corn and salsa. Let cook for an addition 5 - 10 min. To allow some liquid to evaporate.

Add about ½ - 1 cup of sloppy joes to roll. Sprinkle with cheese if desired.
