Banana Bread
the cook:dawn about more

1/2 C Shortening
1 C Sugar
2 Eggs
3/4 C Mashed Banana
1-1/4 C Flour
3/4 t Baking Soda
1/2 t Salt

Preheat oven to 350.

Cream together Shortening and Sugar. Add eggs, beat well. Stir in bananas. Sift Flour, Baking Soda, and Salt together, mix into banana mixture.

Bake in a greased loaf pan 30-35 minutes or until toothpick is clean.

A good trick is to save bananas by tossing them in the freezer when they start to go bad, then let them defrost and peel them before making the bread - it makes them easier to mash before putting in the batter and it lets you save bananas. I used about 5-6 when making this recipe tonight and it made about 2 cups of bananas - so I doubled everything else and figured we'd enjoy 1 cup of banana per loaf instead of the 3/4 the recipe calls for.
