Mexican Stuffed Shells

A friend of mine had given me this recipe a few years ago. It was a big hit at our house and is one of those dishes that tastes great the next day. I usually make a big batch and put the rest in the freezer for later.

you need:
1lb of ground beef.
1 package of taco seasoning.
1 8oz bar of cream cheese.
1 jar salsa (any kind, you'll probably use about 1/2 to 3/4 of the jar)
tostitos, crumbled
1- 1 1/2 cups of taco style shredded cheese.
1 box of jumbo shells.

You'll need to do a little multi tasking here.

Cook shells al dente (approx. 15-20 shells)
Cook ground beef adding taco seasoning and cream cheese to the pan until mixed thoroughly.
Stuff shells with beef mixture (this is the messy part) and put in a 13x9 baking dish.
Cover top of shells with salsa and crumbled tostitos.

Cover and bake for 20 minutes at 350. Remove cover and add shredded cheese. Bake for another 10 minutes uncovered or until cheese is melted.
