Quick and easy calzone

This recipe originally appeared in Southern Living, and has been modified to our tastes.


Ingredients:

1 cup ricotta cheese
3 Tbsp. grated Parmesan cheese
1 large egg
1 Tbsp. chopped fresh, or 1 teaspoon dried, parsley
½ tsp. garlic powder
3.5 oz. of pepperoni or cooked ham slices, chopped
4 Monterey jack cheese slices, chopped
2 cans Pillsbury refrigerated pizza crusts (10 oz. size)
2 cups marinara sauce


Directions:

  1. Stir first five ingredients until blended. Stir in chopped meat and cheese slices.
  2. Divide each pizza crust can into two portions (4 balls of dough total). Roll each dough portion into a 7-inch circle.
  3. Spoon 1/2 cup of cheese and meat mixture into center of each dough circle. Fold dough over filling making a half-moon shape, pressing edges to seal. Place on a lightly greased aluminum foil-lined baking sheet. (I bake mine on a silpat mat on top of a baking sheet instead.) Poke tiny vent holes in dough with fork.
  4. Bake at 375° for 20-25 minutes or until golden brown. Let stand 5 minutes, then serve with heated marinara sauce.

Makes four servings.
