Quick and easy calzone
This recipe originally appeared in Southern Living, and has been modified to our tastes.
Ingredients:
1 cup ricotta cheese
3 Tbsp. grated Parmesan cheese
1 large egg
1 Tbsp. chopped fresh, or 1 teaspoon dried, parsley
½ tsp. garlic powder
3.5 oz. of pepperoni or cooked ham slices, chopped
4 Monterey jack cheese slices, chopped
2 cans Pillsbury refrigerated pizza crusts (10 oz. size)
2 cups marinara sauce
Directions:
- Stir first five ingredients until blended. Stir in chopped meat and cheese slices.
- Divide each pizza crust can into two portions (4 balls of dough total). Roll each dough portion into a 7-inch circle.
- Spoon 1/2 cup of cheese and meat mixture into center of each dough circle. Fold dough over filling making a half-moon shape, pressing edges to seal. Place on a lightly greased aluminum foil-lined baking sheet. (I bake mine on a silpat mat on top of a baking sheet instead.) Poke tiny vent holes in dough with fork.
- Bake at 375° for 20-25 minutes or until golden brown. Let stand 5 minutes, then serve with heated marinara sauce.
Makes four servings.
