
A friend of mine gave me this recipe and it is always a big hit in our house. It is called a soup, but to me it is more like a chowder because it is so thick. I also seasoned it a little bit more with something called Tony Chachere's, a type of cajun seasoning that is a must for us.
It calls for 9 potato's, but I used 11 small to medium ones
2/3 cup butter
2/3 cup flour
6-7 cups milk
1/2 tbsp salt
1 tsp salt black pepper
1/2 cup bacon bits
4 green onions chopped
10 oz chedder cheese
1 pint of sour cream
1. Place potato's in microwave 3-4 at a time. When done, scoop out and place in a bowl.
2. In a large pot over medium heat melt your butter. Stir in flour and cook about a minute. Whisk in milk a little at a time stirring constantly until it starts getting thick. Next you stir in potatos ,salt,pepper, and the bacon bits, 2 tbsp of the green onions and most of the cheese. Cook until thoroughly heated. Stir in sour cream and continue to heat through. Serve topped with bacon bits, remaining green onions and cheese.
