Marylou's Chicken El Toro

This recipe is from Mary Lou.

This is a fast fabulous recipe that I have used for years... given to me by a restaurant cook. It was as reqested as much today as it was 20 years ago.

4 boneless skinless breasts cooked and shredded, I usually just gently boil the breasts in water slowly so they arent rubbery.
1 small onion diced
1 16oz jar of mild picante sauce
mild cheddar cheese or monteray jack cheese
sour cream
black olives
tortillas or rice

Saute onion in a large saucpan with a little oil. When onion is transparent, add cooked chicken and the jar of picante sauce. Simmer slowy for a few
minutes until all picante sauce is mostly absorbed. When ready to serve sprinkle how ever much cheese you like over the entire chicken and let melt. Serve in a tortilla with sour cream and black olives or over rice. Enjoy!
