
Quinoa is one of those grains that looks interesting in the store, but sits on your shelf at home because you don't quite know what to do with it.
Here is an easy Quinoa recipe that can serve as an alternative to cous cous or rice at your next meal.
! c Quinoa
2.5 c beef broth
2 carrots chopped
1 onion chopped
1 tbls olive oil
Rinse Quinoa in fresh water. Place in pan with beef broth. Bring to a boil.
Meanwhile saute Carrot and onion in oil till soft. Once Quinoa has reached a boil, add carrot and onion mixture. Stir, cover and simmer for 15-20 minutes until most of the liquid is absorbed and you can see the spiral on the quinoa grains. Turn off burner and let sit 5 minutes, then serve.
