
The last post reminded me of the fantastic Crockpot mexican dish I make.
Ingredients -
1 lb ground beef or dry tvp
1 package taco seasoning.
8 ounces cheddar cheese
1 15 ounce can tomatoes
1 medium onion
1 small can green chilis.
1 package burrito sized tortillas.
Salsa, iceberg lettuce, sour cream and olives to serve with.
Make the ground beef according to the package of seasoning mix. If choosing to use TVP instead of ground beef hydrate the tvp partially with vegetable broth first.
Chop onion and fry in a little bit of oil, until soft and translucent.
In crockpot layer 1 tortilla, a bit of the ground beef mixture , a quarter of the can of tomatoes, some green chilis and a quarter of the cheese.
Continue layering tortillas tomatoes, beef, chilis, onion and cheese until you run out of filling. Cover with one last tortilla and close crockpot.
Cook on low for 6 hours. Before serving, add extra to the top of the casserole and allow to melt. Serve on a plate with shreds of lettuce, and a bit of salsa , sour cream and olives as a garnish.
