I picked this recipe up in Okinawa, Japan of all places. It was a staple of the drunken Marine diet. It’s pretty easy to make cheap and tasty (despite most peoples initial reaction to the name)
1 1/2 lbs browned ground beef drained
2 packets taco seasoning
1 small finely chopped onion
Black pepper to taste
½ finely chopped green pepper
1/8 tsp ground cumin
Chili powder to taste
4 cups unprepared rice
Grated Sharp Cheddar Cheese
Grated Monterey Jack
1 ½ cup water
1-2 tablespoons margarine

Everything here is approximate I never measure anything and I like my food with a bit of a kick you may want to adjust amounts to your own personal taste.
Cheese- I've found that Kraft makes a nice blend of Cheddar and Monterey with jalapeños all pre grated and ready to use. I use that when I can catch it on sale.
Rice- I prefer to use real long grain rice (Jasmine) I pick up at the Asian Store to the minute variety found in the super market I think it has more flavor and it sticks together much better.
This is by no means a low fat dish but you can substitute ground turkey for the beef and eliminate the margarine all together. It is pretty balanced if followed by a fruit dish for desert.
Preparation:
Prepare rice as directed (I use a rice cooker and about a 1:1 rice to water ratio) Add all other ingredients except the cheese and chili powder in a large skillet and bring to a simmer. Let it cook down until the only liquid remaining is the margarine. (If you eliminate the margarine add a little extra water to make a light sauce)
On a microwave safe plate lay out a bed of rice. Add the taco meat in a thin layer on top of the rice being sure to get some sauce with the meat. Top with cheese and sprinkle with chili powder. Nuke in microwave until cheese has melted. This will serve 4-8 people depending on the portions. Keep the Tums near by.
