
My Dad loves to make this for the family - and I owe the name to him! It's probably the best chicken I've ever tasted! This works best with a Weber kettle-style grill, otherwise the chicken is too tall to put the cover over it.
- Take 1 Whole Chicken - wash chicken.
- Pour 1/4 to 1/3 can of Beer on chicken.
- Cover chicken with Garlic Salt, Lemon Pepper and Rosemary.
- Punch out top of Beer can with "old-style can opener" (The thing that has the triangle-shaped punch thing - make 2 holes opposite of each other.)
- Pour 1 Tbsp of each spice in to beer can (Garlic Salt, Lemon Pepper and Rosemary.) WARNING - beer will foam when salt is added.
- Add 1 Tbsp Lemon Juice (or juice from half a lemon) to Beer can.
- Shove the Beer can up the Chicken's Butt.
- Stand on Grill using Beer can and Chicken Legs. Cover grill.
- Bake for 1 hour and 15 minutes to 1 hour and 30 minutes. Measure temperature - needs to be 180 degrees in thigh meat.
- When you take the chicken off of the grill, pour the rest of the beer out the neck hole. Let bird sit 10 to 15 minutes before carving. It's easier to pull out beer can after the chicken has cooled.
