This is our family's favorite way to get rid of leftover chicken breast meat. I also make a variant of this the day after Thanksgiving with leftover turkey breast.
3-4 Chicken Breast halves, cooked and diced
2 cups swiss cheese (diced same size as chicken)
1 small white onion minced
1 stalk of celery chopped fine
1 cup pecan halves
1 cup dried cranberries (or cherries)
2 tbsp mayo or miracle whip (your preference)
Ranch Dressing
Salt (kosher salt is best)
Toast the pecan halves in a dry pan at about 400 degrees until they are, well, smelling toasted. YOU MUST WATCH THEM CLOSELY as they will scorch if you leave them too long. But the freshly roasted pecans give a flavor that makes the dish.
Combine dry ingredients. Add mayo and just enough ranch dressing to make the ingredients slightly moist, not goopy.
Salt and pepper to taste. Serve slightly below room temperature.
This recipe can be varied about a jillion different ways. I like to "cheat" by adding more of the "goodies" -- pecans, berries, and cheese. Enjoy.
