Banana Bread

½ cup whole wheat flour [you could use all-purpose flour if you wanted, I just want the extra fiber and nutrition]
3 tbsp sugar
¼ tsp baking powder
¼ tsp baking soda
Dash of salt
¼ cup low fat sour cream
¼ cup mashed ripe banana [I use a little more than that]
1 tsp vegetable oil
¼ tsp vanilla extract
1 large egg white, lightly beaten
cooking spray

Preheat oven to 350ºF.

Combine first 5 ingredients in a medium bowl; ake a well in center of mixture. Combine souer cream and next 4 ingredients; stir well. Add to flour mixture, stirring just until moist.

Spoon batter into a 6 x 3 x 2 inch loaf pan coated with cooking spray. [I use a 8 x 4 x 2 in pan only because I don't have a smaller one]. Bake at 350ºF for 35 minutes or until a wooden pick comes out clean. Let cool in pan for 10 minutes; remove from pan, and let cool on a wire rack.

Makes about 6 servings [serving size: 1 slice]
