
This is the sauce for one of the dishes at our wedding, and I've modified it a bit because Eric doesn't like the texture of onions!
Prepare meatless meatballs - I used gardenburger meatballs, and they are frozen, and so I put them in the oven like described on the package so that they weren't frozen before adding the sauce.
Sauteé large pieces of onion in butter:
1/2 onion, chopped
1/2 cup margerine
Run that through a food processor until there are no pieces of onion left, just a applesauce consistancy. (Alternively, you could cut the onions into small pieces and then sauteé them.)
Put back into sauce pan with the following ingredients:
1/4 cup brown shugar
1/2 cup ketchup
1 tsp. chili powder
1 shake Wright's liquid smoke (less than 1/8 tsp.)
Simmer for 10 minutes. Pour sauce over meatballs in casserole dish. Bake uncovered at 350degrees for 45 minutes or more. Serve over rice if desired.
