
5-6 medium Squash
1/2 onion, diced
1/2 to 1 cup sour cream
1/4 cup butter (or margerine)
1 egg
1 cup cheese
(Topping)
Pepperidge Farm stuffing
1/2 cup butter (or margerine)
Cook Squash and onions until soft, drain. In a bowl, combine melted butter, egg, sour cream, cheese, and squash mixture. Mix until combined well. Pour into 8x8 pan. Combine half of the stuffing mix and 1/2 cup melted butter and stir together. Pour stuffing mixture evenly over squash. Bake in 350 degree oven for 30 minutes, covered. Uncover and let brown for 5 minutes. Let cool slightly and enjoy!
