Easy Asparagus Soup

Every week, I get a box of fresh organic veggies. Its a lot of veggies to eat between the two of us, and has kind of pushed us to near vegetarianism at this point. So last night when i got home at 9pm and wanted dinner, I knew I would have to do something with the veggies in the fridge less they go bad. So I grabbed the Asparagus and said " You're dinner" Here is how it worked.


1 Lb Asparagus cut into inch long pieces
2 garlic cloves whole
Water
Chicken or Vegetable broth, or bouillion cube
Salt and Pepper to taste.

Chop Asparagus into long pieces, put into pan with garlic and a little water to cover the bottom of the pan. Cover and cook until soft. Add to blender including the water. Add 2-3 cups of water to blender (or add water to pan and use a stick blender. )
Add bouiilon cube or 1/2 cup broth. The more liquid, the more liquid the soup, if you like thick soup, then add less water. The broth adds a little depth to the recipe.
Blend tilll smooth. I also added a drizzle of half and half , but thats completely optional.
Pour into bowls and serve. As an entree this serves 2, for a starter it serves 4.
