
These cookies are chewy and sweet, with a fuller texture than you normally find with peanut-butter cookies. They don't taste much like oatmeal cookies, despite having oatmeal as an ingredient.
Ingredients:
1/2 cup butter, softened
3/4 cup brown sugar
3/4 cup white sugar
3/4 cup peanut butter
1 egg
1 teaspoon vanilla extract
3/4 cup all-purpose flour
1/4 cup whole wheat flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup rolled oats
1/2 cup milk chocolate chips
1/2 cup dark chocolate chips
Directions
Preheat the oven to 375 degrees F (190 degrees C).
In a large bowl, cream together the butter, brown sugar, white sugar and peanut butter until smooth. Beat in the egg and vanilla.
In another bowl, combine the flour, wheat flour, baking soda and salt; stir into the peanut butter mixture, a little at a time. Finally, mix in the oats and chocolate chips.
Using a household tablespoon, get rounded scoops out of the bowl and form them with your fingers into balls, then press onto a cookie sheet (you may want to use a fork to press them down).
Bake for 8-10 minutes or until edges are golden. Remove from cookie sheets to cool on wire racks. Cookies will be slightly chewy and very sweet and rich. Makes about 48 cookies.
Variations
You can use 1 cup of semi-sweet chocolate chips if you prefer. You may also choose to use "light" peanut butter and/or light margarine in place of the butter. You can also replace the whole wheat flour with plain white flour, but some of the rich texture comes from the whole wheat flour.
