Fava Beans
the cook:deb about more

Hmm fresh green Fava beans. They hit the store in the spring, looking like Green Beans on Steroids, but wow talk about flavor. Here is how to handle these tasty giants.

You'll need
1 lb Fava Bean
1 Tablespoon (or so) Butter
2 cloves of Garlic (or so)

1. Pop the Beans out of the shells, and blanch them in boiling water. It will take a few moments. Strain, run under cold water and peel the skins off the beans.

2. Heat the butter till melted, add garlic and stir, infusing the butter with the garlicky goodness. Drop in the fava beans, cook for a while, till warmed and coated with garlic butter.

3. Serve as your veggie with dinner, mix into Pasta with Parmesan cheese, Smoosh and spread onto good crusty bread, or add them to a vegetable salad as an unexpected burst of flavor.

Whatever you do, Enjoy!
