Vanishing Rolo Cookies
This recipe is from Kelly.
2 1/2 cups flour
3/4 cup cocoa
1 teaspoon baking soda
1 cup white sugar
1 cup brown sugar
1 cup butter, softened
2 teaspoons vanilla
2 eggs
75 Rolo candies. (My advice is to buy several packages. Hey, there are worse things than having a bunch of leftover Rolos!)
- Beat sugars and butter until light and fluffy. Add eggs and vanilla and beat well. Add flour, cocoa and baking soda. Blend well.
- Chill the dough in the refrigerator for 1 hour.
- Shape roughly 1 tablespoon of dough into the palm of your hand and form a ball. Press the Rolo into the ball and cover it completely.
- Place cookies on an ungreased cookie sheet and chill for 1 hour. (Personally, I use parchment paper becuase everything burns on my "non stick" baking sheets.)
- Bake for 9 - 12 minutes at 375 degrees.
- Change into loose clothing, preferably yoga pants and a sweatshirt, and inhale large quanitites of Rolo cookies.
A Few Other options:
- My mom drizzles melted white chocolate on the tops of the cookies. Mom, you'd make Martha Stewart proud! ;)
- I have seen other Rolo cookie recipes that omit the cocoa. If you don't want a cookie that is really chocolate-y, you might want to try that variation.
- I have seen other Rolo cookie recipes that include an extra step -- coating the top side of the cookie dough ball with chopped nuts.
