
Try to find a source for bulk foods, as this recipe can be expensive if you buy those little jars of poppy seeds in the spice department of the supermarket!
1 lemon
1 cup flour
3/4 cup sugar
1/3 cup poppy seeds
1 1/2 teaspoons baking powder
1 egg
2/3 cup milk
1/3 cup vegetable oil
1/2 teaspoon vanilla extract
Preheat the oven to 350 degrees.
Using a zesting tool or vegetable peeler, remove all the zest from the lemon, and chop it fine. Squeeze all the juice from the lemon, and set aside.
Combine the flour, 1/2 cup of the sugar, poppy seeds and baking powder. In another bowl, mix together the egg, milk, oil, vanilla extract, and half of the chopped lemon zest. Add this to the dry ingredients, combining well.
Pour the batter into a greased and floured loaf pan, and bake for 50 minutes, or until a toothpick inserted into the loaf comes out clean.
While the bread is baking, combine the lemon juice, remaining lemon zest, and remaining 1/4 cup sugar, stir until dissolved. When you take the loaf out of the oven, pour this syrup onto the bread, while it is still hot in the pan. Remove loaf from pan as soon as possible, let cool on a rack.
