Easy Oven Baked Chicken

Ingredients:
4 to 6 skinless boneless chicken breasts
1 cup wishbone balsalmic italian vinaigrette dressing
2 to 3 cups bread crumbs
1/2 to 1 cup grated parmesan cheese
3 tsp garlic powder
1 tsp dried parsley or other favoite spice (oregano, rosemary, etc)
1 lemon

Preheat oven to 350. Place italian salad dressing in a shallow container. Soak chicken breasts in salad dressing for a half hour turning once. Mix all dry ingrdients in a separate container, then remove chicken breasts from dressing and press each into the bread crumb mixture to coat well on both sides. Spray each side of breasts lightly with cooking spray and place in shallow baking pan. Bake at 350 approximately 20 to 25 minutes per side or until juices run clear. Remove from oven and garnish with fresh lemon wedges to serve. Serves 4.

This recipe goes great with homemade macaroni and cheese and a tossed salad. Alternatively, mozzarella cheese may be sprinkled on top during last 5 minutes of cooking and chicken served with your favorite pasta and marinara sauce. This dish is quick, easy, and very versatile.
