
It's beginning to feel like the good ol' summertime here in Florida, so I thought I'd post my family's recipe for funnel cakes.
Ingredients
1 1/3 cup flour
1/4 tsp. baking soda
1 1/4 tsp. baking powder
1/4 tsp. salt
4 Tbsp. sugar
1 egg
2/3 cup milk (more if needed for consistancy)
Preparation
Mix all ingredients. Heat grease in hot skillet so there's approximately 1-inch of melted grease. Funnel-pour batter in a swirling motion into hot grease to create the funnel cake. Fry. Turn when starting to brown. Fry other side until done and golden brown. Place cooked cakes on paper towels to drain. Sprinkle with powdered confectioners' sugar and serve. Fresh fruit topping optional. Makes 4-6 cakes.
