Great for snacks and breakfast
2 cups matzoh farfel
3/4 cup walnuts, chopped
2/3 cup honey
1/4 tsp cinnamon
1/2 cup raisins
1/4 cup pitted dates, sliced (optional)
1/2 cup dried apples, cut (optional)
1/4 tsp salt
parve margarine to grease pan
Preheat oven to 325 degrees F. Place ingredients in a large bowl,
stirring with a spoon until well mixed. Using a nonstick shallow baking
pan, spread mixture evenly inside pan. Bake for 45-60 minutes, stirring
every so often, until mixture browns slightly. (Watch carefully after
40 minutes to make sure it does not get too brown. It will still get
crisp after it is removed from the oven.) Cool. Store in an airtight
container. Yield: 5 cups.
Notes:
note 1 - One person heated the honey slightly to thin it
note 2 - One person used prunes instead of dates, cut into pieces
note 3 - I added raisins with about 15 minutes left to cook to get that
nice, cooked taste. Be careful. If they're cooked too long, they become
crunchy and burnt.
note 4 - I added dried applies with about 25 minutes left to cook (since
they take longer to firm up than raisins). It adds great flavor.
