Corn and Cheese Chowder

This is a family favorite at our house, and I'm gonna try and cook it for me and Eric tonight. E hates onions, though, so I'm gonna try to modify it to have some onion powder sauteéd in with the celery.

Saute:

2T butter
1T oil
1 medium onion
1/2 cup choppped celary

Add to the sauteéd mixture and cook until the right consistancy:

3 cups diced cooked potatoes
2 cups milk
2 cups corn (I use frozen corn)

Remove from heat and add 2 cups shredded cheese. Garnish with chopped parsley.
