
This recipe is from BJ at bjlaw.net:
2.5 cups cooked chicken
1 can golden mushroom soup
8 oz sour cream (or plain yogurt)
8 oz mozzarella (can use the skim variety)
salt and pepper to taste
3 stacks Ritz crackers
optional, 1 stick butter melted
Combine first four ingredients. Crush Ritz Crackers and, if you don't care about the calories, mix with 1 stick melted butter. Spray a large casserole dish with non-stick spray. Put layer of crackers in bottom. Put 1/2 of chicken mixture, another layer of crackers, second 1/2 of chicken mixture and top with crackers. Bake 40 minutes at 350.
For low fat version, skip the butter (it's just as good in my opinion without) and use low-fat plain yogurt and skim mozzarella. To make a one-dish meal, add your favorite pre-cooked vegetable to the chicken mixture. I like it with broccoli and cauliflower.
