Marinated Cheese Slices

The wife of one of my husband's coworkers just passed this along. It's getting rave reviews where he works and I can't wait to try it!

Ingredients
½ cup olive oil
½ cup white wine vinegar
3 Tbsp. chopped fresh parsley
3 Tbsp. minced green onions
1 tsp. sugar
¾ tsp. dried basil
½ tsp. salt
½ tsp. ground pepper
3 cloves garlic, minced
1 - 2 oz. jar diced pimientos - drained
1 - 5 ½ x 2 x 1 inch block sharp cheddar cheese (8 oz.) chilled
1 - 8 oz. package cream cheese (freeze until firm enough to cut into squares

Preparation

  1. Combine first 10 ingredients in tightly covered container, shake vigorously. set aside.
  2. Cut block of cheddar cheese in half lengthwise. Cut crosswise into ¼ inch thick slices, set aside.
  3. Repeat process with cream cheese.
  4. Alternate cheese slices in a shallow baking dish, standing slices on edge.
  5. Pour marinade over cheese slices.
  6. Cover and marinade in refrigerator at least 8 hours.
