Apple Bread Pudding

12 slices of your favourite bread
Butter
Apple Butter
Apple Jelly
1/2 Cup golden raisins
1/2 Cup apple juice or cider
1/2 Teaspoon Cinnamon
5 Egg Yolks
1 Whole Egg
2 Cups Heavy Cream
1/2 Cup Whole Milk
1 Teaspoon Vanilla Extract
1/4 Cup Sugar

Preheat oven to 375°F. Generously butter a medium-sized, high-sided casserole dish and set aside.

In a small, microwave-safe bowl, mix apple juice (or cider) with cinnamon. Add raisins and mix well. Microwave on high for one minute and set aside to cool.

Spread each slice of bread with butter. Spread apple butter on three slices of bread, and make a sandwich of each apple buttered slice with a buttered slice. Spread apple jelly on three of the remaining slices and make sandwiches with the remaining buttered slices. Press the sandwiches firmly, then cut each into 1" cubes.

Place sandwich cubes into the buttered casserole dish and set aside.

Vigorously whisk egg and egg yolks until smooth. Add sugar and vanilla and whisk to incorporate. Drain the apple juice from the raisins into the egg mixture. (Set raisins aside.) Add cream and milk. Whisk until fully incorporated.

Add raisins to the bread cubes in the casserole dish, spreading out evenly throughout the dish. Pour the egg mixture over the bread.

Bake at 375° for 25-30 minutes. Serve warm or cooled. Yummy with ice cream!
