
My mother-in-law used to send these to Mike, back in his single days. She sent me the recipe after we wre married, and now I make them for him. Nobody lets Mike cook, and after The Steamed Pork Chops Incident, I understand why!
Ingredients:
1 cup soft shortening (Crisco)
2 cups brown sugar (packed)
2 eggs
1/2 cup cold coffee
3 1/2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon nutmeg
1 teaspoon cinnamon
2 1/2 cups halved raisins
1 1/4 cups broken walnuts
Method:
Mix together thoroughly the shortening, brown sugar and eggs. Add the coffee. Sift together the flour, baking soda, salt, nutmeg and cinnamon, and stir this into the mixture. Then mix in the raisins and walnuts. Chill for at least an hour.
When ready to bake, preheat oven to 400 degrees. Drop rounded teaspoonfuls about 2 inches apart on lightly greased (or Silpat-lined) baking sheets. Bake for about 8-10 minutes, or until set...when touched lightly with finger, almost no imprint remains.
Makes about 6 dozen 2 1/2 inch cookies.
