These are great to have for lunch or dinner, with tomato soup and veggies! Cut them into smaller pieces for appetizers. Also, switch the type of meat and cheese used for variation - try your favorite! We love smoked turkey with cheddar.
Ingredients
2 cups biscuit mix (such as Jiffy or Bisquick)
1 cup milk
2 tablespoons yellow mustard
1 egg
1 package (6 ounces) thinly sliced fully cooked lean ham, chopped
1 cup shredded Cheddar cheese (4 ounces)
Method
1. Heat oven to 350ºF. Grease square baking dish, 8x8x2 inches.
2. Mix biscuit mix, milk, mustard and egg until blended. Pour half of the batter into baking dish. Top with half of the ham and 1/2 cup of the cheese. Top with remaining ham. Pour remaining batter over ham.
3. Bake 45 to 50 minutes or until golden brown and set. Sprinkle with remaining 1/2 cup cheese. Let stand 5 minutes before cutting. Cut into 9 squares; cut each square diagonally in half.
