Corn Casserole
Combine in saucepan:
- 16 oz Frozen Corn
- 1 cup milk
- 1 teaspoon salt
- 4 teaspoons sugar (or to taste)
simmer for 5 minutes until you reach a nice boil.
In a second saucepan:
- 2 tablespoons butter
- 2 tablespoons flour
mix and let combine over medium heat.
Add butter mixture to corn pan, and stir over medium heat until thick.
Pour into casserole dish and sprinkle with parmesean cheese (fresh works really nice). Broil until evenly browned. Serves two with a bit of leftovers.
Another recipe from my mother-in-law. We love this as a side dish, and modified it to be a little less fattening!
