
Easy Minestrone Soup
Total preparation time: 20 minutes
1 tablespoon olive oil
1/2 medium yellow onion, peeled and finely diced
1 clove garlic, peeled and minced
1 stalk celery, trimmed and finely diced
One 16-ounce can low-fat low-sodium vegetable broth
One 16-ounce can kidney beans
One 10-ounce package frozen mixed vegetables
1 medium Idaho potato, peeled, washed, and diced
1/4 teaspoon dried basil
1/8 teaspoon ground black pepper
Heat oil in a medium Dutch oven over medium heat. Add onions, garlic, and celery and sauti 3 to 4 minutes, until onion is wilted and golden.
Add broth, beans, vegetables, potatoes, basil, and pepper. Bring to a boil, then reduce heat to low and simmer 15 minutes. Serve warm.
