
1½ pound of ground turkey [you could use beef, but I prefer turkey]
3 slices of bread, torn into small pieces
1 egg
1 can [10 oz] of ROTEL diced tomatoes and green chilies [I suppose you could use just diced tomatoes]
2 tsp of chili powder
Combine all of the ingredients. Mix up with hands. Spread into an ungreased loaf pan [8 x 4 x 2 in].
Bake at 375 F for 1 hour. Drain off excess drippings. Spread Ketchup all over top of meatloaf, then bake for an additional 15 minutes.
I'm a wuss when it comes to spicey stuff, so the chili powder wasn't that bad. The recipe called for chili sauce to be put on top of the meatloaf, but I just couldn't do it. The meatloaf was yummy yummy yummy!
