
Potato Knipfla
2 C. mashed potatoes
1/2 tsp. salt
2 eggs
flour
Add flour to make a dough. Roll out into a long fingerlike rope and cut into 2 inch lengths. Have a kettle of boiling water. Add knipfla to the water. Boil just until they all come to the top of water and drain well in colander. Brown a cup of bread crumbs in butter and add knipfla. Brown a little and serve with a meat or as you wish.
