
Beef Penne
-About 2 cups of penne (or whatever pasta you want, nothing too long though)
-1 pound of ground beef
-Mixed frozen vegetables, about 1 cup
-1 can of corn kernels
-Chili powder, garlic powder, onion powder, oregano, and basil to taste
-1 large can of red kidney beans
-1 large can of diced tomatoes (I prefer the herbed kind)
-1/2 cup of shredded sharp cheddar cheese
Boil the pasta. Meanwhile, brown the ground beef in a large skillet. Once meat is partly browned, add spices and continue cooking the meat. Add the frozen vegetables and corn, and stir well. Heat until vegetables become tender.
Drain the kidney beans and add to the skillet, along with the undrained tomatoes. Reduce heat to medium, and cook for another 5 minutes or so.
Once pasta is ready, drain, and stir into beef mixture. Sprinkle with cheese and cover the skillet, simmering on low heat for a few minutes until cheese is melted.
