
Ingredients:
3/4 cup flour
1 tsp. baking powder
1 egg
1/2 cup milk
1 sm. pkg. dry vanilla pudding mix, not instant
3 tbsp. margarine or butter
1 lg. can sliced peaches, drained, but save the juice!
Cinnamon
Preheat oven to 350°. Grease and flour 2 pie pans, 9 inch ones. Mix all ingredients in a large bowl and beat for 2 minutes at medium speed. Then pour into pans. Place over batter, 1 large can of sliced peaches, drained well, save the juice!
Then mix 8 oz. package softened cream cheese
1/3 cup sugar & 3 tbsp. juice from peaches in a small bowl.
Beat all at a medium speed for 2 minutes. Spoon over top of peaches to within 1/2" of batter edge.
Carefully smooth this cheese blend over peaches and then sprinkle mixture of 1 tablespoon sugar and 1/2 tsp. of cinnamon over top. Bake at 350° for 35-40 minutes.
Refrigerate. Serve with Cool Whip and maraschino cherries. Serves 8.
