
Note: This recipe calls for chicken broth, but I just disolved 1 chicked boulion cube in 1 cup water. It's the same thing, but much more economical, since broth is expensive if you don't have some on hand.
1 package (6 oz) stuffing mix (like Stove-Top)
2 med. celery stalks, chopped
1 med. tart cooking apple, peeled and chopped
1 med. onion, chopped
1 cup dried cranberries
1/4 cup margarine or butter, melted
1 cup chicken broth
4-6 boneless pork chops
1) Spray inside of crock pot with cooking spray. In a large bowl, mix all ingredients except pork. Place 1/2 stuffing mix in crock pot. Top with pork. Spoon remaining stuffing over pork
2) Cover and cook on low 6-8 hours
Mine actually cooked for about 10 hours and it was still very yummy. The pork tasted delicious; the stuffing was a little soggy, but still very good.
