Salsa Chicken

I found this great recipe on the back on those renolds wrap boxes after a friend ranted and raved about how easy it is to cook. It can be modified for vegetables, meats, or anything you want to cook. I mainly use this recipe on my grill, but it can be used in the oven [you just might want to check the timing on the box] as well.

- serving size: 1 [but you can make as many as you want]

1 chicken breast thawed out
1/2 cup of salsa, any kind you want
1/4 cup of corn or peppers or tomatos


Roll out 2 pieces of Renolds Wrap, about 12 inches long. Place one on top of the other. Add the chicken breast and the salsa and the vegetables and fold the length wise pieces up together, about 2 folds does it. Then fold in the sides the same way. Cook on the grill at medium high for about 16 minutes or until the chicken is done. Then add over tortilla chips and sprinkle cheese over it. Or eat plain with just the chicken, salsa, and vegatables.

The chicken is nice and tender and yummy. You can add whatever you like to the foil. A friend of mine adds some basil and dijon mustard with carrots and a little bit of butter.
