
Back from the dead... now that I'm cooking again, here's a new recipe!
8 oz or so spiral pasta or egg noodles
2 tbsp mayonnaise or plain yogurt
2 tbsp lemon juice
2 tsp curry powder
1/2 cup crumbled tofu
1/4 cup chopped green onions
1/4 cup grated carrot
1/4 cup chopped celery
1 appled, diced
1/4 cup raisins
salt to taste
Cook the pasta according to package directions. In large bowl, mix mayonnaise/yogurt, lemon juice, and curry. Add cooked pasta to dressing and mix well. Stir in remaining ingredients. Serve warm or cold. This would also be yummy with diced cooked chicken in place of the tofu.
