Out of the Family Favorites Cookbook, from the Redlands Junior Academy
5 cups Special K Cereal
2 lbs Cottage Cheese
1/2 cup ground pecans (I used almonds and my KitchenAid food processor to make them finely ground)
1 pkg Lipton onion soup mix
1/2 lb butter, melted (1 stick)
1 can diced chicken with juice. (This is a vegetarian cookbook, so they are referring to vege-chicken. We used FriChik.)
Combine all ingredients. Bake at 350 for 1 hour. Serves 10 to 12.
Kristine's note - don't forget the eggs. It won't set!! This was the 2nd try we had at making this dish - the first one still tasted okay, but looked funny!!!
