
Ingredients:
1 packet taco seasoning
1 cup chicken broth
1 lb. boneless chicken breasts
butter-flavored cooking spray
12 small tortillas
2 c. of Cheddar or Jack cheese (or a mixture thereof)
salsa
sour cream

Method:
Dissolve taco seasoning in chicken broth. Place chicken breasts in slow cooker and pour chicken broth over. Cover and cook on low for 6-8 hrs. With 2 forks, shred the chicken meat into bite-sized pieces. Spray one side of a tortilla and place on Foreman grill, butter side down. Sprinkle some cheese onto tortilla, place some chicken on top, and add another layer of cheese. Top with another tortilla that has been sprayed (butter side up), close grill and cook until cheese is melted and tortillas are crispy, about 3 minutes. Repeat until you have used up the chicken. Top with salsa and sour cream.
Yield: Approx. 6 quesadillas
